I've read these services were only offered between Winslow and Chicago.

In the 1950's it operated all the way. Later, they did cut at Winslow and one meal, breakfast westbound, dinner east bound was at Barstow Harvey House. In the last year or so, they used a LC Diner that had a dorm for the small crew and I belive the lounge was dropped, but I could wrong. Then when schedule changed to an night departure from LA, the sleeper was placed on the San Francisco Chief, and it was coach only east of Winslow.
