Go to the Bytown Railway Association web site-order the 2014 Canadian Trackside guide.

It lists all CN train numbers their start and end points. For the U.S. affiliates as well-DMIR,BLE,IC,DWP,EJE etc etc. Theres also sub division listing and basic maps.

To be honest, I'm not sure where CN loads all their coal and grain within Canada. However, don't think much Canadian coal travels south to ex-IC lines into the southern US. I believe some coal trains originate on CN's Bluford Sub (Edgewood Cutoff in Southern Illinois)and run south. BNSF and UP also hand off coal and grain trains to the CN at Memphis for points south. A good amount of coal is exported out of Mobile, AL.

Probably the only thing we need to complete the discussion is the Potash Trains.

I highly recommend getting the Canadian Trackside Guide as well. If you are American and are blocked by the term "Canadian" in the name, don't be. This guide has a lot of info for the North American Railfan and always did before the advancement of CP and CN acquisitions into the USA. I find the section on reporting marks extensive and this book will answer any questions on who is behind the reporting marks.
