Is the 6995 loco one of the "Admiral" series of locomotives I have been hearing about. I notice the cab roof has an overhang over the windshield.

No, NS SD60E rebuild 6995 has the NS-designed "Crescent" cab and wide nose.

The "Admiral" cab is the NS-designed replacement standard cab and low short hood style, as can be seen on this page of detail photos of NS SD40-2 6119:
