Texas certainly isn't flat, except in a few cases.  The UP line thru Wichita Falls is full of hogbacks , and they are found on the Glidden Sub too. The closer you get to the coastal areas, the flatter the landscape becomes.

You would be surprised how many good sized hills are in east Texas.  Some are hard pulls.
