I seem to remember 2.  Theres a commercial railfan type vdeo out there somewhere showing operations at Betteravia.

I checked my copy of Hal Madson's book Railroads of the Santa Maria Valley  (Olive Press 2001). On page 118 is a chart of the Betteravia yard, showing a two-track "highline" for unloading.

I remember two as well.  I believe each held 10 standard beet gondolas.  Each track was on a wooden trestle over a ridge between valleys that were used to float the beets into the factory.  It was definitely a very interesting operation.
