Best day trip on Irish Rail

I will be in Ireland in June 2020. Looking for a scenic day trip on Irish Rail. Any suggestions. I will have a car and staying at various inns.

Going from north to south

Coleraine to Derry / Londonderry for coastal scenery
Belfast to Dublin - Mountains of Mourne between Newry & Dundalk, coastal scenery between Drogheda & Dublin and the Boyne bridge in Drogheda
Dublin to Wexford - coastal scenery as far as Wicklow then hills and mountains
Mallow to Tralee - Mountains
Cork to Cobh - coastal
