Netherlands Railway Museum is in Utrecht, short ride from Amsterdam. https://www.spoorwegmuseum.nl/en/visit/visitor-information

Amserdam Central is about the best place for pictures / train watching, if you want a different view of the station take a ride on the ferry [back of the station] to NDSM and back [Ithink it is the F4] [the ferry is free].
As above Utrecht is only 30 minutes away, there is also a shuttle service between Utrecht Central and the museum.
An Amsterdam region travel ticket allows unlimited travel on NS and GVB [tram and bus] services, you can go a fair distance on the NS services. i.e..  A ride out to Haarlem to see the station, well preserved with lots of wood panelling etc.

In Rotterdam, an about 45 minute train trip from Amsterdam, you'll find https://www.miniworldrotterdam.com near the station.
They have some big modell train layouts.

There's a ton of cab-ride videos on YouTube you can look at to scout locations around Amsterdam (generally stations).
