Diners open on the truncated LD Western Trains?

Prepackaged meals only and you have to eat in your room.

Just road #1/2 last week. You can eat in the Diner but it's pre-packaged garbage you get on the eastern trains. Diner has a staff of 1 person. If you're in a Sleeper your attendant comes by with a menu, asks what you want and brings it back to you. No service to Coach passengers I saw. This is supposed to last to 5/31 but more than likely will last all summer till travel rebounds or sleeper space starts to sell heavily. Everything is cashless as well so Lounge will only take cards. As of right now there's just no demand for them to bring full service back yet.

Tough. Amtrak in their infinite wisdom has decided coach passengers can no longer use the diner.

I am happy with a burger in the
Lounge vs pre boxed food.

People who are un-banked are going to have a problem with cashless, unless they buy debit cards of some sort, which have fees. 
2 days on a train, I would got very sick of breakfast sandwiches, cheeseburgers, and pepperoni pizzas - essentially bus depot food.

Is it illegal to bring a cooler with some food in it on a train.  Or even a few  home made sandwiches.?      Here we go with the foodies again.

If Amtrak is Greyhound on rails, then bus depot food is appropriate ;-)

Coolers are good for a few hours on a long day trip, not for 2 day overnight trips. It is also another piece of luggage to carry on. There are limitations.

When people drive a long distance or fly and stay at a hotel that night, they eat a decent meal at a restaurant, not takeout from Dunkin Donuts or Tim Horton's. Most of us do not regard 7-11 cheeseburgers and hot dogs on rollers as a meal. You said you eat on-the-go and maybe 1 or 2 meals day, but most of us do not live and eat like that.

Then I suggest you never become a long haul driver then.

There are many small-medium "a bit bigger than a lunch box" coolers available that when packed right can contain enough (semi)prepared food for 2-3 days at proper temperature. 

a lot of Stuck up Amtrak passengers here!

2 -3 days of food packed in a lunch box ? We are not astronauts, and there is nothing hot.
