It's great when intended cruelty backfires. This was really interesting and it's too bad we haven't found their notes. Bet there are clues about specific dishes in their letters home.

I have a "Central Pacific Railroad Computing Table" book dated January 1, 1876 on the fly leaf but stamped Property of California Pacific R.R. on the cover.
The inside cover has anote pasted in saying "China Time - multiply by 12 divide by 13." I have always guessed that this to compute the pay for a work gang of 12 from which one portion went to the gang cook.
