About a dozen trains a day.  Are you hard over on Tunnel Hill?  If not, go just a bit more south and hang out in Dalton, GA.  CSX and NS mains cross there, and you'll add a good 30-40 trains a day into the mix, and you and Mrs. Doo can have an enjoyable dinner at the Crescent City Tavern.
 

Go a little further south to Dalton, same CSX trains and many more NS. 

Tunnel Hill is on CSX’s W&A Sub.  There are about 16 road trains a day plus a local.  The following are the scheduled trains:

There are about 4 unit trains of either coal, ethanol, grain, or limestone.

But as previously posted, nearby Dalton adds the traffic from NS’ Atlanta North District which sees about 30 a day.

I’ll throw in my recommendation for Dalton as well.

The Dalton Depot is as good a spot to train watch as any although from a sun angle perspective; late morning on is better as the sun will be overhead or behind the depot - this time of year anyhow. The local visitors bureau has their office in the depot so you’ll also have access to restrooms. There is an ATCS monitor in a window and the scanner feed is broadcast over a speaker.

Why not do both?   Go to Tunnel Hill and get you shot. Tour the original tunnel. Then go to Dalton.  It's not an 'either or' proposition.
