Epson Scan 2 Question

In order to switch to Apple Catalina, I had to switch to Epson Scan 2. Using Epson Scan 2 at its highest jpeg settings' quality, Scan 2 produces about a third of the file size (example: 3 to 8) of the original Epson Scan in the Professional setting. Would someone please explain why?
